I belong to a semi-conservative family. My immediate family and siblings are quite open. One side of the family is quite modern and other relatives are extremely religiuos.
When a rishta comes along through one side of the family who also has some links with other modern part of the relatives, it is always awkward to anticipate what kind of people are they. If given the chance, I will have an informal meeting but considering these factors, dont have such luxuries.
So as much as I would like to get to know her better before making a decision, I know i have limited options; email/chat or phone if i am luckier.

I suppose the whole nikkah thing and then learning about your spouse would be good in late stages, otherwise you'd have people married over 10 times or so.
Aside from that, the idea of having lunch and perhaps some conversations over the phone sounds good. However, I don't think my family would allow conversing with the prospespective alone in a separate room or going out for lunch.
