Why limit God to do something the easy way? Because that's all our little pea brains can grasp? When prescribing arabic words as if God "speaks" them indicates so. The earth is billions of years old, it was NOT formed in its present form overnight with any magic words.
Doesn't it make Him more powerful and knowing to create man through the longer term plan of evolution? Does He have to do things instantly to be powerful?
