so im getting married in 83 days and i dont know how to make chai .. i know how to cook desi khanna, just not chai(i dont like to drink it). i know kind of sort of the dumm stuff. but can i get a recipe frm u chai holics for that PERFECT chai ki piyaa?

^ chai is probably the easiest thing to make compared to other desi dishes.
There are two important factors in making good chai, first the type of tea you use and second the type of milk/cream you use.
Type of tea depends on an individual's taste. Tapal danedar for example is a good tea. The best tea to my findings is English Tetley (loose or bags) and the second to that is English PG Tips. To follow these brands can be Tapal, Lipton Yellow label or Brookbond Red label etc. You can also find a fine variety of teas at Persian stores.
Cream or Milk also depends upon individual taste. To me the best taste is achieved when you use Carnation's evaporated milk or condensed milk in the tea. If you use regular mild, you have to keep the proportion of 80-100% of the water you use.
Just boil the water, add tea and let it boil for 2-5 minutes. Add milk and wait for 5-10 minutes if it is regular milk or 0-2 minutes if it evaporated or condensed milk. Add sugar appropriately and serve it as hot as possible.
You can serve tea with biscuits, cookies, samosa etc. But a person can't enjoy the tea while eating spicy stuff like pakoray or samosas. Lightly sweetened items go well with the tea. But when you serve guests, they may not be there to necessarily enjoy the tea only. They would probably care more for what you have served them along with the tea so feel free to serve whatever you like. But if your husband or someone in the family asks for tea and they really are particular about their tea, then don't serve them anything spicy.
My husband and i like more milk in our tea than water. Since we use 2%, to make 2 cups of tea, we use 1/2 a cup of water, add tea bags to it (we like Tapal Danedar) and let it simmer for a couple of mins and then add 1.5 cups milk. Once this boils, let it simmer for a couple of mins to get that karhi hui chai taste. At times we also add saunf and/or ilaichi to the kahwa as well.

50-50 is a good ratio to use regular milk. 1% or 2% you should use more. half-n-half use even less, evaporated milk should be far less than the water.
Make your own proportion according to your preference.

There may be people out there who like masala chai but I can't stand it. Masala chai is probably more common in India but not in Pakistan. In Pakistan, we add a touch of allaichi sometimes and that tastes good. Some people also add sonf but that flavor becomes too strong. To enjoy a perfect cup of tea, there shouldn't be any masala in it!
There is more to chai than meets the eye.
1. Some people do not like tea bags for making authentic chi and I am one of those and trust me I am not the only one. Those who drink chai at my home will always compliment us with sincerity.
2. Some people like Karak chai ( strong) as opposed to light chai.
3. Some people like more milk in it than others.
4. Some like chai when you put everything at the same time in chai and give it dum others like to put milk and sugar/sweetener themselves.
There can never be a universal formula for desi chai. So serve the chai the way your future hubby will like , if he likes chai , he will tell you what kind of chai he likes. For your susra-e-lee rishtay dar you have to find out what kind they like and make sure you make it their way to make them happy and make them love all the more.
