Likelihood is her parents wont chat to her again...or atleast for a long time...they'll feel ashamed of their daughter and ashamed of themselves for letting this happen to their daughter...
So thats not something you can do anything about...as for your parents just tell them shes Muslim...
And please please...if she is willing to go against her parents for you...do the same for her...dont put her in a situation where her parents hate her and you end up saying you cant get married cos your parents dont like her...have some tutte during this time cos your girl does...and stand by her...
