I love the way we make an omelet, well I guess it’s more of a khagina? But it’s so filling that we make it for lunch or dinner too. Cut a couple potatoes in thin small pieces the way you do fruit for a chaat. Fry up these potato slices with finely chopped onion. Add finely chopped ginger, this gives it a nice flavor and removes that eggy smell and taste. Add chopped tomatoes and chopped green chillies and sautee. Crack and beat some eggs, add salt to taste, chilli powder or red pepper flakes and chopped coriander and mix. Pour egg mixture into frying pan. Give it a good mix and let it all come together, yum!

yes, it is called Khaagina…i LOVE it too!

btw, adding a little milk makes the omelet more fluffy!
