ooooh what’s the daal please. I know nothing about daal’s except how to cook the orange one which is the easiest.

2 ways:

The simple:
1 cup Arhar daal, washed
3 cups water
1/2 tsp haldi, salt, 3 dry red chillies

boil. u may need to add more water if you’re not using a pressure cooker.
When boiled, add tarka of oil, zeera, slided 4-5 garlic pods and a tsp of red chili powder

The masala way:
to the same amount of daal and water, add haldi, mirchi, salt, and a paste made of 1 roma tomato + 1/2 onion + 4 garlic pieces + 1" ginger piece
When cooked, add tarka of zeera, curry patta, a few garlic slices and green chillies, and a tiny bit of deghi mirch for color

What is the consistency of your daal? Thin and soupy or thick?

the hari chutney must have been for the kababs cuz it really doesn’t go with the arhar ki daal.
I love arhar ki daal but I prefer to have either one of the following as accent/condiment:

  • green chillies medium sliced and roasted in a bath of vegetable oil and sprinkled liberally with salt
  • banana peppers filled with a paste of imli and chaat masala and then pan fried till they are brown.
