sometimes meat smells sometimes it does not
is the meat that smells even good?

I think that meat of the animal from the colder regions - because the animal has a thicker layer of fat - has a smell to it. I’ve noticed the difference in lamb meat if you buy it from the northern parts of US vs lets say from Texas.
