But are you sure it wouldn’t rather harden the meat? I have a feeling if I put the vinegar before the meat is tender, it might stiffen or harden the meat? vinegar being sour. They say something about not adding any sour element into meat before it is tender as sourness will stiffen it.

It’s such a dash though, I think washing the meat in vinegar would be more detrimental. By dash I mean like 1/2 tablespoon. And I’ve tried it before and the meat hasn’t ended up tough.

Like other people have posted, different meats will have different scents. If it’s really really strong and bothering you, then the meat’s probably bad. But if it has a slight gamey smell, then it’s just a sign that it’s fresh and good.
