The vinegar is the best idea. I always do it when I’m making ground beef into something - the smell whilst cooking is def. off-putting, and a dash of vinegar in it kills it.

But are you sure it wouldn’t rather harden the meat? I have a feeling if I put the vinegar before the meat is tender, it might stiffen or harden the meat? vinegar being sour. They say something about not adding any sour element into meat before it is tender as sourness will stiffen it.
