Pressure cooker for chota gosht and daals, slow cooker for nihari and paaye, I have this one big wok I love to cook chinese noodles in it.
And yes I love one of my steel deghchi from Pakistan I guess but I bought it from brooklyn.It is really helpful in dawats. And my very own choti bari deghchiyon kaa set from emril is nice but is 10 years old so I might change it.![]()

calphalon is pretty good, my sis in law's been using the same pot by that brand and it has no sign of wear and tear, totally sturdy especially after using it for desi cooking

I have induction hob .. none of my favourite pots work on it .. but I recently bought this pot from Ikea and cant tell you how brilliant it is ... food cooks super lovely in it ...
It really does matter in wht pot we choose to make a dish , coz i can feel the texture of the salan very different to when i cook the same salan in any other pot ...

best utensil I ever had was an old cast iron frying pan that had been sitting in the fraternity house for decades, heavy as anything, forged in the 1930s based on the barely visible seal around the handle. Not quite sure what happened to it, probably still being used by one of the newer guys.

For desi stuff, I have a set of wonderful thick karahis.
Then there is the crockpot, which initially I disliked but have grown to be fond of.
Wusthof knives. They are really very awesome.
And of course, the tava.

i use non-stick stuff. my hubby wanted to invest in some le creuset ... but i couldn't even lift it up at the store.. plus it costs way tooo much!
