I'm going to do most of the cooking, my sister is helping, making the second turkey and some of the sides but will all be home made!
ok I'll keep adding to this when I have time....first the turkey and stuffing...
Thaw turkey in refrigerator (fully frozen will take about 2-3 days). Wrap the turkey in a wet towel and place on a large platter, place in frig.
Stuffing:
Use either 2 bags of seasoned bread cubes or set out 1 to 2 loaves of white bread, uncovered and allow it to get stale overnite. When stale, cut or break into cubes. In a frying pan, fry up 1 cup of chopped onion and 1 cup chopped celery till soft. Add 1 to 2 sticks of butter, allow it to melt. Add salt, pepper, tyme, sage, garlic, parsely to taste (tip: use more spice if you're using stale bread, if you use the packaged bread cubes, they are already spiced usually). In a large bowl, combine bread, butter mixture and hot water until the stuffing is moist but not wet.
Remove giblets from turkey, set them aside in a saucepot, fill with cold water. Wash turkey thouroughly. Spoon stuffing into the cavity until loosely filled. Cover the opening by pulling the legs over and using tinfoil. Baste the entire outside of the turkey with melted butter. Then sprinkle with salt, pepper and garlic. Cover the entire turkey with a tent of tinfoil and place in preheated oven at 325 degrees. Roast for about 20 minutes per pound. (usually takes about 5 hours to roast a large stuffed turkey) During the last 45 minutes of cooking, remove tinfoil tent and baste the turkey with the pan juices. When done, place turkey on a carving board and remove stuffing to a bowl. Keep warm. SAVE the roasting pan for gravy!
Gravy
Rinse turkey giblets. Place in a saucepot, fill with cold water, 2 chopped celery stalks, 2 chopped onions, salt, pepper, garlic and 2 chicken buillon cubes. Bring to boil then simmer for 2-3 hours. Remove giblets and vegetables leaving just the broth. When turkey has been removed from the roasting pan, pour the gravy base into the pan and stir, scraping the bottom. Bring to a simmer, stirring and scraping frequently. Slowly add mixture of cornstarch and water until gravy is thickened.
