I love Tex Mex and Mexican food…a lottt.
I usually make tacos and fajitas at home and can easily make super healthy versions of these.
What are some Mexican/Tex Mex or inspired dishes you make at home?

Other then the usual suspects (tacos, fajitas, enchiladas..) my boys really like the chicken and black bean tostadas I make. I top them with shredded purple cabbage and avocado…yum yum!!

I wasn't particularly fond of Mexican food.. then i tried Khatti's recipe for enchiladas like ages ago... it was delicious and we loved it. Then i did taco night. Loved that. Then i tried Ree Drummond's recipe for enchiladas using corn tortillas and that just fueled the addiction even more. Plus her recipe for salsa... omg it's amazing.
Basically. Yeah. I love Mexican food now.
Also, Alton Browns guac recipe.... fan-freakin-tastic.
3AM taco craving now.

Taco night is a once a week thing in our home...its so much fun! I love love love it!

We make routinely make following at home
- hard tacos
- soft tacos
- chill beans
- and at times cheese quesadilla

I don't get they hype of hard tacos; not a fan of that crunchy messiness...don't like the texture. Soft tacos...now those are nice. So are flautas!

Totally agree! I don’t like them at all. I like soft corn tortillas but the crunchy ones are just plain weird.

I remember once my cousin…who is a fan of hard tacos…was baffled by how a relative did not like them. I think relative in question had maybe come from Pak. And it’s like…err…it’s not necessarily a fobby thing. He prolly just doesn’t like the texture and I don’t blame him. I love crunchiness of samosas and gol guppay and chaats. But it’s a different kind of crunchiness…and the shell or fried pastry is not salty in an of itself. But the salty and overly crunchy texture of those store bought shells…combined with qeemah…and the mess…just no.

The crunchiness of the hard tacos is fun...I actually do like them but not more than soft.
One way I eat them is I literally break them up in a bowl and add all of the usual taco ingredients plus avocado chunks...its like a taco bowl in a way and tastes soooooo good!

^You could try that with lightly fried pieces of soft tortilla too.

Soft tacos all the way…hard shells just can’t compare
some other favorites: Mexican gumbo, enchiladas, taco skillet, taco salad, fajitas, etc
