Whatever you can whip up at that time should be fine. If guest came without giving appropriate time they should be OK with whatever you have , they should also be OK with if you offer them plain chai , soda , lassi , rooh afza , thanda pani. If you have to worry about what they are going to tell others in case they are not taken good care of , do you really want to care about those kind of guests ?

This happened to me recentley.. bummer:
I would just serve whatever is made in the house and if you have time make a quick desert
like sooji ka halwa or trifle with just some cake and cream sprinkled in flaked chocolate and put in fridge to chill
until they arrive, good luck :)

Cake, dahi bahray, biscuits , pizza, patis, i think lots of things.
yah nuggets can also get immediately at home like K&Ns kay. right.

Sometimes we have premade frozen shami kababs or frozen rasmalai...and we'll serve that...along with chai. We usually have either nimko, mixed nuts, and cookies around as well.
I always keep frozen mini egg rolls on hand, just in case I need to come up with something quickly...

Aside from the usual chai-biscuit, we keep a pack of ready-made boondi in the pantry, mix it with yogurt and a can of chick peas and some sugar and masalas. Makes a really yummy bhel-puri-cheat! And yeah anything out of the freezer or in the fruit bowl. Should be enough if its unexpected guests as they wouldnt expect any kormas and biryanis.

We usually have some of the following at home:
Masala chips
Samosas/spring rolls
Seekh kebabs
A selection of nuts/crisps
Hummus and tortilla chips
Biscuits
Chana chaat or sweet corn chaat
Dhai bara (made from the packet mix in emergencies)
Fresh fruit
Chicken puffs
Veggie or prawn stir fry
If all else fails, I'll make pakoray, and sandwiches. For meetha its biscuits and fruit.
