Okay, so I have a question for all you chefs out there. I don’t know if this happens only to me, or if it’s something that happens with all of you.
So the day you make/cook the chicken in salan, in pasta, biryani, etc. it tastes fine. However, when you eat that same chicken the next day, it has a different taste to it. Not as good as the day before. Does anyone know why this happens, or what can be done about it so that taste doesn’t come in the chicken the next day?
Is there some ingredient we can add that will help with it? This is not to to say that the chicken is not edible at all, it just has an different taste to it the next day. And I add all the normal stuff that should be added (i.e. - ginger/garlic, etc.)
i think i know what you are talking bout.... what worked for me was warming up the dish the next day, on the stove top rather than teh microwave...with a little bit of water added... otherwise there is a .. weird... raw taste to it.. inside... if i do it in the microwave.
I dunno if this is relevant in anyway , but a few years ago I used to have that issue .. then someone told me to cook the chicken well in the onion and then add ginger and garlic but dont let the ginger garlic get over cooked ... within a few minutes add the spices and move forward with the rest of the recipe ...
The raw taste comes coz something hasnt been done properly ... i.e chicken hasnt been cooked fully from inside. So ensure that you give it a good cooking time at the beginning of the dish ...
hmmmm I perfectly know what you are talking about and I feel that taste is universal....I could not get rid of that taste ever...especially the meat part that clings to the bones is what tastes terrible the next day....for the same reason I have stopped buying whole chicken altogether....getting boneless chicken mostly now, as I never make biryanis with chicken...
Khawa - I’ll give that a shot. It’s just that when I’m doing making the salan, I mostly transfer it to another dish. So to heat it up for the next day, I’d have to put it back into the pot that I just washed yesterday
CB - It’s not much of a raw taste. The chicken is cooked, and tastes cooked. I don’t really know how to describe it

Naabigh - I use the tomatoes and yogurt that are on sale so it’s always something different. how would that make a difference though?
Most of the chicken that we buy here is hard pressed to be considered chicken. Sorry to burst bubbles but if you investigate enough you will find that these animals are barely fit to be called animals thanks to the chemicals that are pumped into them and their feed.
I categorize chicken under "processed foods" even when I am cooking it at home.
Honestly I don't find chicken at all appetizing. I would eat seafood or even mutton and veal over chicken anyday.
