Re: tandoori chicken
Oh yes!!!! Its one of my faves!! This recipe comes out really great
2 lb chicken pieces, skinned (legs and breasts work best)
1 tsp salt
1 juicy lemon
1 3/4 cups plain yogurt
1/2 medium onion, peeled and quartered
1 clove peeled garlic
3/4 inch cube of fresh ginger, peeled and quartered
1/2 fresh hot green chili, roughly sliced
2 tsp garam masala
3 tbsp yellow food color mixed with
1/2 to 1 1/2 tso red food color (optional)
wedges of lime for garnish
Cut each leg into two pieces and each breast into 4 pieces. Cut two long slits on each side of each part of the legs. CCut similar slits on breast pieces. Slits should never start at an edge and they should be deep enough to reach the bone.
Spread chicken out on one or two platters. Sprinkle half the salt and squeeze half the lemon over them. Lightly rub the salt and juice into the slits. Turn chicken over and use the rest of the salt and lemon on that side. Set aside for 20 minutes.
Combine yogurt, onion, garlic, ginger, chili, and garam masala in a blender. Blend until it becomes a smooth paste. Empty the paste into a strainer and push the mixture thru into a large ceramic bowl.
Brush chicken with food color and then put them into the bowl with the marinade. Add the salt/lemon juices from the platters. Mix well, making sure the marinade goes into all of the slits in the chicken parts. Cover and refrigerate for 6 to 24 hours (the longer the better)
Preheat oven to maximum temperature. Take chicken out, shake off as much extra marinade as possible and arrange pieces in a single layer. Bake for 20 to 25 min. or until just done. Serve on a bed of lettuce and garnish with wedges of lime.

If the tandoori chicken is in love with the mash then its ok, love knows no borders.
If its a forced arranged marriage on a plate, i would think twice before committing such a heinous act.
And BTW, just bcos they r from 2 different cultures, doesnt mean they cant get on...???

I made tandoori chicken and it came out hard.. not juicy like it should be. Where could have I gone wrong? I'm gonna make it tomorrow again so help me out please
Re: tandoori chicken
You could try baking the whole lot including marinade in a single layer in a deepish dish with some oil on top. Baste it for a bit by spooning over the marinade after about 25mins of baking. When the marinade dries and the oil separates, chicken should still b juicy and not hard. Cover it with foil after its cooked so it doesn't dry out. If u overcook it will b dry too.
Thanks RH. :)
I'm using full chicken this time lets see how it goes. does it have to do something with covering while cooking? I didn't cover it last time I made
Re: tandoori chicken
I made a whole roast chicken today, but I covered it will foil and put a thin layer of boiling water at the bottom so it steamed for first 45 mins, then baste, uncover and roast.
When all liquid dried out, I basted again with the oil and then let it roast some more, then cover and relax for a time.
Thank you so much Rupay you've been very helpful!
InshaAllah will follow your advise today. But last time it took so much time and I didn't like the outcome. My marinade becomes thick and even after cooking for so long it was not dried completely.. especially inside the cuts, it was soggy inside there. I hope it doesn't happen this time!
Re: tandoori chicken
^ Thats strange, maybe your oven isn't hot enough for the marinade to dry out? Just keep basting until the outside is roasted. If u have a grill, put it under a hot grill after its cooked in the oven, this will definitely dry the liquid. Hope it turns out nice.
Re: tandoori chicken
Do we call it Lahori chargha as well?
