I have a block of dried tamarind in the fridge. It’s been there for several months, maybe a year. I wanted to make some imli chutney in a few days for guests. I was wondering what the shelf life is? I bought it from Chicago and I live in the middle of nowhere with no desi grocery store or else I would’ve just gone out and bought another block of dried tamarind and thrown this one out.
Is it still good to use? It looks fine (no fungus or anything)

if its fine just test it by putting some imlee in hot water and taste it if all good make the chutney no worries then

should be fine, as its been refrigerated and is dried. make sure you cook it thoroughly.
