white is a relatively new canon color for western brides. late turn of the centuty, it wasn't uncommon to see brides wear green or some other color.
as for those eastern brides, it's an adoptive thing, from the western color. eastern asian brides also do not wear white, as they have their own traditional colors. some afghani and kashmiri cultures also call for green.
not all the symbolism for colors can be explained by the western perspective.
