my personal fav. is as given below it takes few minutes…
7-cup sweet :-
1 cup=besan,
1 cup=oil or desi ghee,
1/2 half cup=grated coconut + 1/2 cup suji
1 cup=milk
3 cups=sugar or as per taste.
few eilachi’s[cardamoms]
method:-
heat oil add eilachis n add suji ,bhoone suji well den add besan coconut ,milk & sugar at a time. mix well n cook until all the mixture becmes golden brown or till besan bhun jaye. bring it in a sweet dish n garnish it wid kaju ,badam, pistachio…
milk - 1 litre
sugar - 1/2 cup
sivaiyan - 1/2 cup
seeds from cardamoms
1/4 cups of each - chopped pistachios,chopped coconut,chopped almonds,raisins,and chopped dried dates.
rose water essence - 1 tsp.
in a pot,add milk,sugar and cardamom seeds.cook on low heat until it starts to thicken.add the sivaiyan and continue to cook until it softens.add the dry fruits and cook for 5 mins.remove from the heat and add rose water essence.
one of the easiest and the most delicious recipe ever...its an arabic sweet dish called mohallabiya
boil milk add in desired amount of sugar....in a seperate bowl take lil milk n add in corn flour n mix....now slowly add in corn flour mixture in boiling milk...cook it till it becomes the consistency of a custard....now the magic ingredient comes....its called maa zahar in arabic...that means flower water...it certainly doesnt mean rose water...u can easily find out anywhere in middle east...add about 1 tbsp of it it the milk...now pour the mohallabiya in small bowls. sprinkle pistachios generously...chill n njoy!
but what if u cant find that flower water (maa zahar)
can u substitue with rose water???????
used to live in arab country, but no longer do.... so incase i cant find a good arab grocery store,
my question is can i substitue with rose water?
how similar or different this other flower syrup in thickness, consistency, smell , colour etc to rose water ? any other imp differences/similarities?

well i dunno amnaar whther rose water can substitute it but u can give it a try...waise both has extremly different fragrances...but thickness , consistency n color are exactly same
