Can someone pls help me I need an AMAZING recipe for arbi(arvi). I have never even touched this vegetable before in my life so pls share any/ all advice you have so that I can make an awesome salan.

i know one thing about Arvii. while cutting Arvii into thin circles, it’s viscous secretions come in contact with the skin of your hands. a very small percentage of people are sensitive/allergic to it. you won’t know until it’s too late. so, wear a pair of gloves. these secretions cause your skin to itch a lot and often hives develop as well.
i’m NOT trying to scare you off but just wanted to warn you.
^that happened to me once a long time ago.. was cutting Arvis for ami and ended up with terrible itch on my hands and arms that went all the way up to my elbows… lasted a few hours.
There’s a way to avoid the itch: Boil the arvis like you boil potatoes first. Also, rub your palms with oil before peeling (in case you decide not to pre-boil).
Here’s a great recipe:
Cut the arvis lengthwise.
Slice an onion, chop a medium tomato. Fry onions with some zeera until transparent. Add whole red chillies, tomatoes, haldi, salt, red chilli flakes. When the tomatoes get mushy, add the arvis and cook covered on low until done. Garnish with hari mirchi and dhaniya.
Another recipe:
Boil the arvis, like 3/4 done. Peel and slice lengthwise or in rounds, whatever.
In some oil, add some ground dhaniya powder, a little ajwain, salt, red mirchi powder, spme khatai powder, some zeera. As soon as it starts bubbling, add the arvis and stir to coat with the masala mixture. Sprinkle some water and cook on low until done.
