Suggestions please

Ok im bored and dont plan on sleeping the whole night so I think I should do something worthwile and cook up a storm… I found this recipe in my recipe folder but I dunno if it sounds ok… maybe it needs some adjustments for the desi tastebuds or is it ok as is? Im not so good with making adjustments to a recipe all on my own…

Its spicy tropical chicken and the recipe is as follows:

Spicy Tropical Chicken - serves 4
1/4 cup lime juice
1/2 cup pineapple juice
3 tbsp minced jalapeno peppers
2 cloves garlic, minced
1/4 cup minced shallots
1/4 cup light soy sauce
2 lbs. boneless chicken tenders

Combine all ingredients except chicken to create a marinade.
Put the chicken in a large plastic zipper food storage bag and pour the marinade over the chicken. Let marinate in the refrigerator for at 2-6 hours, turning occasionally.
Drain chicken and discard marinade. Grill, broil or saute the chicken as desired until fully cooked, about 10 minutes.

What do you think? I think it might need some parsley or more of a mirchi flavor.. no? Or would that ruin the flavor of the dish?

I followed the recipe exactly as was, the only thing is I didnt have light soy sauce (never even heard of such a thing) so I used regular soy sauce and used like 1/5 a cup of it instead of 1/4 cup... lime juice I didnt have enough limes for 1/4 cup so the rest I just used lemon juice. I marinated for 4 hours and grilled it for about 25mins-half hour... the recipe is wrong, it doesnt cook in 10 minutes!

maybe the pineapple juice is too much and instead of half cup, use 1/4 cup. Also sprinkle little bit salt, black pepper, and maybe a dash or two of hot sauce.

I've used pineapple juice for a salmon recipe, and I've found that on the occasion I used a little too much, it absolutely ruined the dish by making it too sweet. Did you use sweetened pineapple juice? As lusi said, 1/4 cup for the next time might be better. Light soy sauce is basically lower sodium soy sauce. And even though soy sauce has sodium, you still need to add some regular salt and pepper. Also, maybe some ginger paste, some onion paste too along with ur garlic (which would be good as a paste too). And then, maybe a touch of cumin & coriander powders? This is meat, so you need some more flavorings. But it's all up to you. Hope you have better luck next time.

Here's my recipe for baked chicken breast. I made it today, and it turned out quite nicely.

1 chicken breast, thin sliced. (doesn't have to be very thin, maybe about 1/4" thick)
1/2 tbsp ginger paste

3/4 tbsp garlic paste
2 tbsp onion paste
3-4 tbsp ketchup
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp salt
3 tbsp canola/vegetable/olive oil

Put the chicken to the side, and ix all the ingredients together in a big bowl. When mixed, add in the sliced chicken, mix all together. Cover and let sit overnight in the fridge.

Next morning, pre-heat oven to 375 degrees. Put chicken in baking dish (I usually put some foil on the bottom, less clean-up) and cover with foil, bake for 25-30 mins. Comes out moist and yummy. I use it to make chicken sandwiches, can have it with veggie kichri.. it's quite versatile.

Thanks for the recommendations. I knew the recipe sounded a bit off but couldnt quite figure out what was needed. I dont wanna desify the thing so next time ill just go with a lil bit of salt and maybe black pepper also... it would've been good I think if the pineapple juice wasnt overpowering the entire dish. I used the regular pineapple juice from gefen... they do have an unsweetened version also... should I use that next time?

Im gonna try this recipe again next week with some adjustments.
