suggestions for one dish?

ok we r going tomorrow for a picnic…one friend is bringing sandwiches…the other one has already marinated the stuff and we have plans to grill it on the spot…now i am stuck…what should i make? i was thinking of salads but it wud get soggy if kept for 3-4 hrs?so suggest me something? asap plz…

how about chinese style fried rice with chicken and/or shrimps & veggies? or pasta salad or coleslaw? haleem?

How about a mix fruit salad and vegetables cut up. (baby carrots, watermelon cubes, grapes, pineapple)

I love cold pasta salads...you can make penne pasta with olives, green peppers, feta cheese, olive oil and vinegar. Tuna and pasta with mayo dressing. Cheese tortellini with chopped tomatos and oregano.

how about some sweet dish...

you can bring** cold pasta salad*. Make a base of yogurt, mayo, and lemon juice or vinegar. And to that add boiled pasta and veggies of your choice. Another cold salad is **potato salad* or cole slaw. You can make these salads or buy them easily from your local supermarket such as Walmart or Target. You can get hummus and bread/veggies as an appetizer or side dish. Or just make a really filling good old desi yogurt salad. To make this you simily boil some potatoes and dice them. Dice a couple of tomatoes. Finely chop some onions. And then you are going to add these ingredients to a bowl of yogurt that you have whipped smooth. And you can season with a little chili powder, salt, and garam masala. Pouring imli over it givies it a nice tangy touch. It's basically like a yogurt chaat.

Puff pastry/stuffed pastries**.......Want to make something that will save you some time and is fairly easy to make? Buy some pepperidge farm pastry sheets......the square/rectangular ones from the grocery store. Don't buy the circular ones. If you have any left over cooked keema in the house.....fill those pastry squares with the keema and bake according to instructions. If you have left over chicken, shred it up and lightly sautee it with finely chopped onions and tons of black pepper. Stuff pastries with this mixture and bake.

how about a pasta with tomato sauce? I think spaghetti might be a bit messy but you can boil ziti/rotini pasta and add tomato sauce, veggies or meat, and cheese. How about mac n cheese? Or maybe you can bring a casserole dish. How about rice? It could just be brown rice with chickpeas and boiled potatoes in it. Or it could be rice with pieces of chicken/other meat. It could be rice with veggies. How about** kababs?** You can make beef or chicken kababs. Or another yummy alternative is **aalo tikki (potato pancakes). **You just boil some potatoes. Then you remove the skins and mash them a bit. To this slightly mashed potatoes, you'll add finely chopped onion, dhania (chopped corriander leaves), chilli powder, salt, garam masala. Mash this mixture up with your hands and a masher until free of lumps.......but it should still be firm enough for you to shape it. (Don't add water to this mixture). Once your lump free, take some of the mixture and make a medium sixed circular pattie. When you are shaping them into circles....your hands should be slightly wet as this prevents them from breaking apart when you fry them. After shaping them into circles....dip them one by one into a beaten egg......and shallow fry in oil until both sides are golden brown in color.

Forget about savory stuff and just bring dessert. It could be a cake or cookies or ice cream or pie or doughnuts or pastries or pudding or jello or fruit and custard. Or you can bring desi sweets like mithai, kheer, etc.

you can make fajitas (use the mccormick seasoning) and then warm and assemble tortillas there take salsa

or you make kabobs and pick up some fresh naans to go with it and make chutney with a salad thing

make chicken and rice burritos

salad wont get soggy jst dont use dressing on it. keep dressing separate and mix on the spot.

but i like mamaof3's idea. cold pasta salads r awesome i love them.

Cold pasta salads are always a hit for barbeques and picnics! People love them.

You could do a bunch of sides to compliment the barbeque like potato salad, corn on the cob, grilled veggies, shrimp, nacho chips, dip and salads, spinach dip with hawaiian bread, etc.

There are so many options...regardless...have fun!
