Since you guys are always such a huge help, I come to you again.
My ammi is as Pakistani as they come but she hates meat. So please reccommend some good veggie recipes.
Anyone have a good vindaloo recipe?
I made bhagrai bhaigan last week - so none of that please.
Also kaddoo koftas r really yum. U just grate them and mix in some besan and spices to make em stick, absolutely no water. deep fry them and add in masala to make a saalan.
I have to agree with funguy...i made this kadduu/chanay ki daal and it was yummy. Same way as he described.
Try giving your mom tofu. It is yummy. Make veggie and tofu stir fry.
Also, cabbage ki sabzi. Masala bhoon kar add zeera, ajwain, rai in the masala also and just add cabbage and simmer and bhoonafy it.
Steam broccoli and serve with brown rice.
Green beans. Boil them and then make a stir fry with chili/garlic sauce and serve with brown rice.

Ingredients: Baby Okra (you can get the frozen ones - just don't defrost them else they'll get sticky), 1 large onion finely sliced, zeera poder, dhania powder, lal mirch, garm masala, salt to taste, hara dhania for garnish
In hot oil stir fry onions until browned.
Add all the masalas and stir for a few seconds. Immediately add the okra and salt.
Stir fry for a few minutes.
Cover tightly and cook on low heat until done.
Garnish with fresh green dhaniya.
Mushroom Subzi-
2 packets presliced pre cleaned mushrooms.
1 medium tomato diced
4-6 cloves garlic chopped
1/2 tsp zeera
5-7 green chillies finely chopped.
2 tbsp tamarind sauce.
Salt to taste
1 tsp fresh chopped dill to garnish.
In a bit of oil add the zeera when it starts turning color add the garlic followed by the mushrooms. Saute for a bit, then add the tomato and green chillies and sprinkle the salt. As the mushrooms start leaving some water, reduce the heat to medium and put the lid on. After about 5-7 mins when the tomatoes are liquidy and the mushrooms have reduced to half their size add the tamarind sauce, stir around just a bit, sprinkle the dill and food is served!
My husband is a vegetarian so i have made all sorts of veggies, rajmas and paneer dishes.
Here's a list of things that i make from time to time: zeera aloo ki subzi, aloo matar gobhi, gobhi gajar aloo, chuqandar ki subzi, rajma (kidney beans), aloo soya, aloo matar paneer, matar paneer, onion capsicum paneer, onion capsicum subzi, okra bhujya as well as salan style, cabbage subzi, kurhi, anday aloo ka salan, timatar ka salan, aloo kababs, khichri, palak paneer with cashews and almonds, cabbage kofta salan, channa masala etc. and much more.
Just let me know your mom's favourite veggie and i'll tell you the dishes.
4/5 potatoes cut into 4 to 6 pieces or sliced round
1 tsp salt
1 tsp red chilli powder
1 tbsp oil
1 tsp zeera
1 tomato
fry the zeera in oil, add potatoes, salt and chilly powder. Stir fry it for few minutes and then add water and let it simmer for while until the potatoes are done. Bhonafy the aloo zeera subzi with tomato.
Actually for me cooking vegetarian is not a pain. I love learning new things and actually enjoy the food myself so usually its me, my husband and ammi that eat vegetables.
