substitute....

hey..what do you use as a subsitute for white wine???..a lot of italian food has white wine in their recipes.. and some desserts use rum, brandy, or whatever… thanks!

in cakes etc. i use orange juice or any juice as substitute!!

White wine can be replaced by chicken stock, as for baking you can simply omit the alcohol component all together...or add almond extract, butter extract...there are all sorts of extracts available at baking specialty stores...

What's wrong with cooking food with wine?. I thought alcohol consumption was haram not grape juice. Doesn't alcohol evaporate at high temperatures?. It's just for the taste, and not 'khimr' (the high).

attia- i know this is going to sound stupid, but doesn't the orange juice leave a taste afterwards??

ohh yea. i heard about that too as well. i think my khala mentioned it in the passing, while watching the food chanel :smiley: i guess you could do it, but…ahh i forgot what i was going to say

It depends on the recipe of course but when cooking meat /chicken it may be a good idea to use something acidic - diluted apple vinegar or lemon juice (my favourite) works well, and marinading improves flavour and tenderness. Juice may be ok in some sweet things - esp, grape or apple juice. Often water or broth is also OK.

White wine can be replace by white vinegar and sugar, apple vinegar is not acidic enough to balance the effect of white wine. so 1/2 cup of white wine= 1/2 cup of white vinegar with 1/4th cup of sugar dissolved in it.
