Depends wat kind? U looking for english version the ones they do in the oven or desi version cooked like a saalan (curry)?
Also, wat kind of stuffing u looking for in these peppers? mostly they are stuffed with either a rice stuffing or a keema stuffing...

For the kheema version, the recipe I use is to make the kheema for the stuffing first:
Ingredients:
Kheema
Ginger/Garlic/Green Chillies
Salt
Dhania/Jeera powder
Haldi
Red Chilli powder
Peas
Onions - chopped finely (not sliced)
Basically fry the onions in oil then add garlic/ginger and chillies....fry for a few minutes and then add kheema, when kheema is sealed, add rest of masala's and let cook on medium heat. Meanwhile in a separate pan, heat some oil, add very small amount of all the masala's listed above and fry, then add pureed tomatoes and a little water...let this reduce down till cooked, keep adding water.....when done leave on lowest flame...
now prepare the peppers by cutting the topes off and cleaning the inside......drain well.
Add peas to kheema when kheema is done.
Then take spoonfuls of the kheema and use to stuff the peppers....when full place each pepper in the tomato sauce mixture....
place all peppers in this pan and then cook on very low flame with the lid on.......when nearly done, sprinkle on garam masala.
Serve garnished with dhania, with chapatee's or pitta bread.
You can use the same recipe for stuffed tomatoes
For the english version, I have only made once, I just did vegetable rice recipe, with little bits of chicken in and stuffed the peppers with this....then place them in an oven with a bit of garlic butter on each one......that was used as a starter as opposed to a main course

not really but i think if i were to try,
i would get them in a variety of colours ie, green, yellow orange and red.
iwould cook some spicy keema , with lots of adrak , dhania and mint. sprinlke some fresh lemon juice .
cut the top of th peppers,s coop out seeds, fill up the peppers with keema fillingand bake them for 15 minutes in the oven . .
when they are done, i would serve them with , roti or rice and raita and achar.

What I have had is this qeema mixture with boiled rice added to it and the nstuffed in bell pepper. Mum makes the filling pretty much the same as dolma filling.
