stiry fry vegetables

I have a bag of the frozen kind in my freezer. I am kind of turned off by asian food so dont want to make a chinese stir fry but was wondering what else can i do with the vegetables that is yummy and retains the crunchiness of the veggies. It doesnt have to be a desi recipe, non desi would work wonderfully too, except no Asian.

Ok how about stir fry them with just salt and black pepper and not too long, just couple mins on high heat. Then in a baking dish put a layer of mashed potatoes, on mashed potatoes a layer of marinara sauce, then a layer of all those stir fried vegetables, then another layer of marinara sauce, then a layer of bhona keema, then a layer of mozzarella cheese. Bake the whole thing for like 15-20 mins till cheese is all melted and the whole thing is heated through.

Oh yeah you can do pizza topping, add some shreded chiken or mince meat...yum yum...

Oh or maybe soups, rolls, salads, stuff them in chicken...

Roast them. Mix veggies with pepper salt olive oil some paprika some oregano or dried basil, and a few smashed garlic cloves, put on a cookie sheet and bake at 350 for 10-15 mins. You could add some other veggies to it also.

Make vegetable Lasagna or vegetable rice. :>
