Re: Steak (Meat)
hmmmmm. here's why i posted my prev thread about islaamic cooking. THere's a recipe called Steak Diane thats exquisite but calls for 1 tsp of brandy. The alchohol cooks out, cant survive the heat...I dont know what it would taste like without it and i dont know of anything that could replace that kind of taste but since its such a heavenly recipe, I'll write it here and maybe you all can suggest replacements (or let us know how it is without). Here goes Steak diane:
2 steaks (bone-in is best)
1/8 tsp salt
1/8 tsp ground pepper
2 tbsp butter
1 tsp dijon mustard
2 tbsp shallots,minced
1 tbsp butter
1 tbsp lemon juice
1 1/2 tsp worcestershire sauce
1 tbsp fresh chives, minced
1 tsp brandy
1 tbsp fresh parsely, minced
Season both sides of steak with salt and pepper. Melt 2 tbsp butter in heavy skillet; add mustard and shallots. Saute over medium heat 1 minute. Add steaks and cook appr. 3 min on each side for mediium-rare. Remove steaks to servingplate and keep warm. Add into pan drippings - 1 tbsp butter, lemon juice, worcestershire sce, chives. Cook for 2 min. Add brandy; stir and then pour sauce over steaKS. Sprinkle parsely over top.
Re: Steak (Meat)
If you are cooking steak for the first time, you might think it is not really done or at least that is what I thought the first time. So, in case you can't really get over that medium-rare thing and want it well-done, please don't keep it in the skillet. Instead cover it with something and bake it for a little while in the oven & trust me, it will be tender from inside. If you keep it on the skillet for too long, all the juices will dry out and it will become too hard to bite into.
Always serve it hot & fresh, it is not something you can make a few hours before the party & then just warm it up like many other Desi dishes.
Re: Steak (Meat)
I haven't had steak in Canada but in Pakistan they used to have this steak with mushrooms and cheddar sauce stuffed inside the steak and some gravy thingy on top. OH GOD!!!!!!! Gastronomic heaven indeed! Steaks are a lovely way to eat meat. If anyone has the recipe for the mushroom and cheddar one, please share!
Re: Steak (Meat)
Miss Sarah, you are truly mean. mama now NEEDS a steak...cheddar,mushroom n all. Wont be a happy mama till i get my MEAT!!!!
Re: Steak (Meat)
Yeah tell me about it, I am craving that so bad right now.
I don't understand how people can eat rare or any degree of that. I've never tried it actually. Wouldn't it taste bloody?
Re: Steak (Meat)
Ack...i went out with another couple who treated us to a really really expensive steak dinner (at "sparks", that italian steakhouse where there was a gang shooting). anyway, its still really famous for its steak but disgustingly expensive. I like my steak COOKED....maybe a little pink in the middle so still juicy but not MOO-ing. Well this restaurant served their medium-well steak still MOOing, it was so gross that I was choking on it and wishing that i could hang my fork over the table candle to cook it some more. ack patooey.
Re: Steak (Meat)
Most recipes which require alcohol just use it as a reducing agent, you can get the same effect with orange juice. I’ve been substituting it in loads of recipes without any problems.
Re: Steak (Meat)
