Steak - how do you like/cook it?

My husband bought some sirloin steaks which I’ll be cooking tonight.

So I was wondering how you all preferred your steak, and whether you had any tried and tested recipies for the steak or the sauce?

What is you favoured sauce?

I would have given you a recipe in a jiffy , but I run miles away from steaks :( so we will have to wait until other experts come along ... I have a strong feeling Mirch will be able to help you for sure :@:

But why CB? Is it just red meat in general you don't like?

yup tiger ... I simply dread red meat :( .. you will be surprised I havnt had it since 14 years ... is keema red meat as well? coz normally i eat kababs and kofta's or keema if cooked really well ... but thats the only form I eat ...

But you cook red meat on dawats and stuff, do you not even taste it? I think keema is technically red meat, but get where your coming from.

actually technically speaking its not the red meat that i dont eat .. coz I just realized , its just the boti form that i dont eat … I do use lamb in haleem … keema for kababs and koftas or keema dishes .. .so literally its just stuff like boti’s i dont eat …

On dawats I just taste the masala to check if all is well with the salan .. hubby does the boti testing :cb:

You're comment about the boti tasting made me remember a time when I asked my hubby to taste the aloo tikkis I was making. 4 aloo tikkis later, I asked, "well?" his reply, "I'm still tasting - pass me another".

:omg: Tiger , how clever of him :omg: … in my case I have the taster in one hand a danda in the other , dare he ask for another one !

Kidding there ! When ever I am cooking for a dawat, he comes around wanting to taste a bit of everything and I tell him off constantly saying , if you eat it now you wont enjoy it later .. i want you to enjoy the food as much as the guests so hold on for a bit … works every time :cb:

For my older son I do it the American way season it with salt and pepper for 30 minutes or so and then broil it in oven 8 minutes per side.
Once it is done my son pours loads of BBQ sauce on it and enjoys.

For rest of the family I rub some meat tenderizer on it first the I marinate it with shan tikka masala , garlic and ginger paste overnight , and then broil it in oven for 8 minutes per side.

I know steaks can be 'rare, ‘medium’ or ‘well done’. So which one is it in 8 minutes? See for my desi mind, 8 minutes for thick meat just does not seem enough. I mean we do gallaying and bhoonofying of meat for like ages… I’ve only had steak in pakistan in those fancy restaurants and did not like them much!

MissF. Are you based in London? If so I highly recommend going to the Meat & Wine co. in Westfield. The do a full seperate halal menu, and even serve non alcoholic wine (not that I've tried the wine).

Steak is really good though.

In the United States and Canada, when the heat source for grilling comes from above, grilling is termed broiling.[2] In this case, the pan that holds the food is called a broiler pan, and heat transfer is by thermal convection.
We are desi so we cannot stand the sight of pink meat, therefore All our steaks are cooked through. If you want it as “gala hoa” as “nihari key boti” then you have to rub it with meat tenderizer and wit for a couple of hours before you grill/broil it at low heat for some time. I have never done it that way.
The only thing I slow roast are baby back ribs. Yum yum.

Tigerlily, I will ask my brother n bhabhi (real foodies) to try that place first as kurbaani ka bakras :cb:, before I can muster up any courage…
