Spinach and Ricotta Cannelloni

Does anybody have a tried and tested recipe?

I will be using lasagne sheets, none of that filling tubes nonsense.

The tubes actually arent that difficult to fill. The trick is to not boil them until they are done --that will make them difficult to fill. I boil them until they are a few minutes under and the rest gets done when they are in the oven!
For the filling, I sautee spinach on a pan with a bit of salt and pepper to season. I mix ricotta cheese with mozarella and cheddar, and also beat one egg into it and add the spinach. Fill a ziplock bag with the mixture and cut one tip off and then pipe it into the tubes like that. For the pasta sauce, I like to use a keema sauce, like the kind I make for spagetti, so I put some sauce on a pan, line the tubes over it and then cover with sauce and sprinkle cheese over and then bake. Super easy and super yummy!

Main difference is I add meat to the sauce and skip the seasoning they add to the cheese as my meat is already seasoned

I've already bought the lasagne sheets so I need to use them.

I was just unsure about the spinach and cheese bit. You only add salt and pepper, no other flavours?

Well because I have seasoned keema in the pasta sauce, I find I dont need more for the spinach-cheese filling. But if you arent adding any meat, then yes I think you will need more to give it a better flavour. You can try the version in the recipe I posted, give it a taste before adding the egg and if its too bland, add some more to bring it up to your liking. I like to use these recipes as a base and then adjust as needed, as I find these goray recipes can sometimes be quite bland for desi taste!
