how to store them so they remain usable and fresh for longer period of time.
i just cleaned my spice unit today and saw many spices that i rarely use like oregano, ajvion,mustard seeds, etc. i buy these kind of spices to use in some new recipe and they r not used in regular day to day cooking.may be i will use them once a month or twice.i try to buy smallest packet avilable but how much i gonna use at one time about 1tsp. so how to store them, one option is put in fridge what else.also how u store opend packet of yeast, shan masalas .

You can do a few things to keep masala's fresh:
- use airtight small jars ..
- make sure the masala's are not directly or nearly above the stove and the kettle. Steam can destroy spices.
- opened packets of masala's , you can use fold the opening end and stick it with a tape. They are already in airtight plastic ... nothing happens to them for a few days after , unless you expose it to steam.
