Soup

Last night I made some chicken stock. Today I want to make some soup out of it, not corn soup, not hot and sour, not chicken noodle.

Suggestions please.

My mum makes yummiest soup... dunno whats it called and how she makes it..but it just tastes yummy in this luvly weather :)

cream of chicken soup and i swear its the yummmiest soup...

Tu soup bananaye ke leye chicken stock tu aapney bana hi lya hai , ab usko cholhey pe charha dain. Merey andaze ke mutabiq aapne yakhni banatey waqt ek lehsan, ek payaz our chang sabat kali mirchain bhi daali hongi , zaiqey ke leye :k: agar nahi daali theen tu ab daal kar boil karlain …

1/2 cup Maida le kar usey butter main bhoon lain ( maida kam ziada hosakta hai depending on soup quantity. ab ismain ek cup doodh dal kar paste bana lain our ubalti hoi yakhni main daaltey howey chamach hilaati jain, agar koi helper hai saath main tu usey chamach hilaney pe laga dain.

ab check karain ke soup thick ho gaya hai ke nahi , agar nahi tu phir upar wala step repeat karain, thora sa maida ka paste our bana lain ya phir alternate courn flour add karlain.

serve kartey howey thori si fresh cream soup ke ooper dal kar serve karain.

Ok nikki baji… you can make cream of chicken, corn chowder, or any other cream base soup.

What you do is in a pot heat little oil, add ginger garlic paste, sautee for couple mins. Then add all purpose flour, saute for couple mins ( you will need a whisk) Then add little stock and work with your whisk to make a nice thick sauce, once it is all smooth add shredded chicken, corn, mashrooms or whatever you want. simmer for couple mins then add more stock and cream (you can choose the ratio of stock to milk/cream (cream would give it a richer flavor compared to milk)). Mix it well. Check the seasoning ( normally I keep the seasoning simple salt and blk pepper). You can add little red pepper for a kick or little hot sauce. Let it simmer on medium low heat for 5-10 mins. Garnish with little chopped cilantro… and your soup is ready to eat! :cheegum:

^^ Maybe you should try sour cream instead of regular cream, I am sure it will come out good ( I have seen soup recipes on food network where they used sour cream in place of regular cream) and hopefully it will finish your sour cream aswell :smiley:

Can you explain the step above. I want to make chicken cream soup like they serve in Shezan in Lahore.

  1. You take Maida and butter and mix in a pan like you make sooji halwa?
  2. Then add milk (full milk, skim milk?)
  3. Mix and two and add it into the yakni

If u want to make Arabic "shorba" then here's how :)

2 cups stock
2 medium tomatoes
1/2lb boneless lamb
1/2 cup oats
2 tsp tomato paste
salt, black pepper
lemon juice

Puree the tomatoes add the tomato paste and the stock..cook it over slow fire and add the lamb. When lamb is tender, sesaon u're soup and add the oats till they're done. Add the lemon juice when u're about to serve it..

The Arabs temper is with butter and onions (till light brown) but it's upto u.

niksik..when i dont want to cook i simply make cream of chicken soup...
what i do is...make yakhni of chicken (having meat and bones)...put water...1 onion which is peeled and not cut..some black peppercorns...dats it...let it cook...

then in other pan...put some butter...saute shredded chicken...corns...mushrooms...then put yakhni..put milk..season with salt and freshly milled pepper and some fresh cream..simmer on low heat...its ready :)

i dont thicken it with cornflour paste...i like it the way it is...
