mix vegetable and tofu hot and sour soup :>
black pepper - 1 tsp
boiled adameme beans - 1 cup
boiled corn seeds - 1 cup
coriander leaves - 1/4 cup
corn starch/flour - 2 tbsp
eggs - 2 medium & beaten
finely chopped green chilies 5-6
ginger and garlic paste - 1/2 tsp each
hot sauce - 1 small bottle
mixed vegetables - frozen ( or fresh finely chopped carrots, string beans, spinach) - 2 cups
olive oil - 2 tbsp.
onion - 1 chopped
red pepper flakes - 2 tbsp
salt - 11/2 tsp
soy sauce - one 12 oz bottle
tofu (sliced in quarter in cubes) 1 packet
tomatoes - 3 medium garden chopped
vegetable stock - 1 cup
vinegar - 2 tbsp
water - 3 cups
in a pot heat up water. place all vegetables except green chilies and coriander.
let them come to a boil. strain vegetables out and add the corn starch in until the stock thickens. still keep the stove on. add in the beaten eggs and keep stirring. when beaten eggs' strands are cooked, add the adameme beans and corn seeds in the stock. add olive oil with strained vegetables back in the stock again, also. heat some more for 5 minutes. by now the vegetables' texture will be soft, so be careful in stirring. add in spices -- > salt and peppers.
give the lid on the pot and turn the heat on slow for the soup to get fully cooked, for half an hour.
meanwhile, in a small three compartment deep dish, place green chilies in vinegar in one compartment, hot sauce in another and soy in the third one.
check the soup for taste. add in tofu slices.
replace the soup in a serving bowl with a ladle.
garnish with chopped coriander.
serve hot.
makes 6 4 oz cups
