My dad (yeah punjabi) knew more urdu than her... Shes is of no help here :(
Well many of the urdu poets were punjabis e.g. Allama Iqbal, Faiz... so I guess the knowledge of urdu/ farsi is not limited to only urdu speakings :D

There were Urdu language poets outside Punjab. In fact, I think india probably had more Urdu speakers than Pakistan though many Indians have left no stone unturned to sankritinize Hindustani

"goyam mushkil, wa gar na goyam mushkil"
This is a Ghalib's qit'a [4-liner]. in this she'r [couplet] he is telling his Ustaad Mirza "Be-Dil" who probably had asked Ghalib earlier to do shaa'irii in an "Easy to Understand" Urdu so the masses could understand and appreciate his style of poetry. Mirza Be-Dil and Ghalib considered themselves primarily as a Farsi Poet and it was a source of their pride. Ghalib has a very thick volume of shaa'irii in Farsii.
on the other hand, Ghalib had a hard time establishing himself as an "Official Poet" in the Royal Court of the last MuGhal Emperor, Bahadur Shah "Zafar" who was a great Urdu/Farsi poet himself. at that time, another renowned urdu poet, Ustaad Ibrahim "Zauq" was the Official Royal Poet. Since Zauq was an arrogant person, he didn't like Ghalib being a better poet to have any audience in the Royal maHfil. Since Ghalib was NOT from Delhi, he was discriminated as an outsider, Zauq and Ghalib used to taunt each other [of course in a dignified way]. Zauq's main objection was that since Ghalib was from Agra, he lacked finesse in urdu. to offset his criticism, Ghalib used to write poetry in a more "persianised" urdu hence harder for the commoner to understand.
keeping in mind the above criticism, Ghalib in this stanza replies to Mirza saaHib's suggestion. he says:
i understand, as you pointed out, that the language of my poetry is harder to understand while learned people, such as yourself, complain and encourage me to use an "easy to understand" language in my poetry, my dilemma is that if i use "harder persianized urdu" then you complain and if i use easy urdu then Zauq taunts at me...!!!!

meaning in urdu: 'kahuuN to mushkil aur agar na kahuuN to bhii mushkil' :(**

Yeah there had been many urdu poets outside Punjab, no doubt. But it is worth noting that few of the most prominent URDU poets were punjabi's themselves and thus you can't deny the contributions made by punjabis for the urdu language.
