Yikes, I'd prefer those veggies in salad form or maybe in a stir-fry or some sort of dish where they're not pulverized. We don't usually use those ingredients in desi handis.
Broccoli with boneless beef strips -- desi Chinese.
Kale, spinach and mustard leaves (you can even add broccoli). Makes a yummy saag dish.
Green beans (cut) cooked with keema.

A lot of people do, I don't, my husband doesn't like those in desi dishes. I use the non desi ones in salads.,

My Ammi used to make a really good quick sabzi side dish to go with fresh chapati by using frozen french cut green beans (the French cut ones only!!).
In a scant bit of oil, add rai (mustard seeds) and then let them start to sputter, then add very thinly sliced onion and sautée until it starts to brown. Add your frozen french cut green beans and a tiny amount of adrak lassan, salt, haldi and lal mirch. Cover for a few minutes and then bhoon it like a quick stir fry. It will be a "dry" dish but oh so good with chapati!

I love palak...palak paneer...palak with chicken; not so much with aalu. But I like unadulterated palak. Once saag or broccoli is mixed into it....I won't go near it.
