Shrimp rolls

I’ve always made chicken rolls (boil and shred chicken, add veggies etc)

This is a simple question but it has me feeling annoyed…when making shrimp rolls should i pre-cook the shrimp before chopping and making the rolls? And if i do pre-cook it…won’t it get too tough when i fry the rolls? If it’s added uncooked will it be cooked through by frying? Sorry if this is a dumb question lol

And any good recipe for shrimp rolls would be so appreciated!

The shrimp rolls that I have tried were not fried. It was shrimps, veggies, and noodles in rice paper.

Yeah the rice paper ones i’ve had and made too…i want to make the crispy fried ones so i’m unsure whether you use uncooked or pre-cooked shrimp =/

I won’t put uncooked shrimps. Cook them and as soon as they turn light pink, take them off the heat and shock them in ice water to stop cooking.
Dry them off with paper towel and then use them in the filling.
