I stirfry veggies first (carrots, peas, bellpepper, mushrooms, etc) in sesame and canola oil mixed, towards the end I add salt, black pepper, red pepper .. stirfry for couple of more minutes.
Then I fry chicken or shrimp (whichever) with little bit of salt and garlic in canola oil, sometimes I add soysauce and hot sauce.
Boil the rice separately until they are almost done, then drain them and layer them over veggies and shrimp combined. Let it simmer on low heat for 5/6 minutes then toss it.
It turns out reasonable ..

I basically do the same thing as Restless.
Seasonings mainly consist of: black pepper, salt and red crushed pepper.
However I don’t use hot sauce (but soy sauce is a must!) and for the ‘fried rice’ effect I stir fry the rice once it is boiled with the vegetables/shrimp or chicken.

Whenever I make any type of fried rice, I use either day old cooked white rice, or make the rice early enough to let it come completely to room temperature before I stir fry it with the meat/veggies/seasonings. I learned this tip from a Chinese cookbook, it keeps everything from clumping together, and the grains stay separate.
I also have scrambled egg in my fried rice…after the rice is completely stir fried, I scoot it all to one side in the wok, and crack in two eggs…I scramble the egg, and then mix it all back together.

I make it in rice cooker or make it biryani style. For the rice cooker just soak basmati rice for 2 hrs. Then in oil, I add chopped ginger and garlic. I add chicken, after a liytle while veggies salt, Chinese salt, soy sauce, knorr chicken cube, , vinegar. I fry scrambled egg separately. Add this mixture to rice with appropriate amt of water and turn on rice cooker. It tastes pretty good but does get a little clumpy. Other method is to parboil rice like biryani and layer and put in on dum. This has better results. Yeah substitute chicken for shrimp. Shrimp requires less cooking time.
