So I had this dish called ‘Shola kebab’ at a bhabi’s house .Now she is a fantastic cook (and she knows it)…and makes all sorts of lovely things,but this particular dish was served on a bed of lettuce and it looked like shredded meat,possibly beef.It wasn’t spicy or anything,just totally delish.
But however I asked her she would not divulge the recipe.I mean WTH!!!..what was I going to do with it???My khala saas also asked and she totally blanked her. Anyways…can someone please put me out of my misery and tell me if they have heard of this dish and how to make it.
We make something similar, CharmedOne and it's called "Aatish Kabab's"
1 kg (finely sliced beef)
1/2 cup yoghurt
1 tablespoon ginger/garlic paste
1 tablespoon brown onion paste
1/2 tsp red chilli powder
1/2 tsp black pepper
3 tablespoons oil
salt
You marinate everything for a couple of hours and in a heavy-bottom pan drizzle some oil and cook this over very low flame till the meat is tender and dry. Lastly you give a "dhungaar" (smoke) and spread it over a bed of shredded lettuce.
Thank you for that recipe...it sounds like it could be what I'm looking for.Do you cook the beef until it's breaking up by itself?

I made this today and it was an instant hit with everyone.I did add the raw papaya and marinated it this morning.The koyla thing just added the final mwah at the end.I shall think of you every time I make it.
Now I have another special dish to cook for dawats.
How do you do the 'koyla' thing? Is it the same as charcoal which you light, place it on aluminum foil and then add drops of oil on it?? Is this the right way? I wouldn't wanna spoil the meat. And BTW, I love pasanda a.k.a parchey... yummm...I dunno how to get that in the US though :(
