Sher Birinj

Which I guess is the same as kheer/rice pudding?

Anyway here’s how we make it, Kabul style.

Wash around half a pound of rice thoroughly and spread out on a cloth to dry. When it’s dry crush it lightly with a pestle and mortar (or blitz it in the food processor but keep an eye on it)

Bring two pints of milk up to the boil and mix in some saffron threads, sugar and sultanas. Reduce the milk until thick and creamy before adding the crushed rice. Leave the mixture to simmer untill you have a thick custard like consistency.

Either serve hot or cold, sprinkled with nuts and rose water.

As they say, the proof of the pudding’s in the eating…

Goes by that name too, but I think in urdu that means custard?

I don't think rice pudding or kheer have the rice crushed do they? But firni does?

Thap, forget the firni thing.......that's just a farsi thing. This is sher birinj and does have crushed rice. I mentioned kheer and rice pudding because that its closest equivalent.

And.. Sahhreen… Sheer Brinj is the Dari name for Kheer :slight_smile:

That is not Sheer Birinj. The one you have pic of is FIRINI, Sheer Birinj is completely diff, and i had it yesterday, it's so sweet. :)

Btw Sheer Birinj is the Farsi word for this dish, though we have a Pashto word for it too, i'll ask my mama.

How confusing...we've always called it sher birinj and firni is probably what you refer to shir birinj. And that's both in farsi as well as pashto.

They both taste good though.

I'm not letting this go, firni is where you crush the rice! Kheer is just rice pudding!

Firini is different mara, it’s that custerd powder while Shir Biring is rice with milk and sugar. I guess so, it’s common in our areas, its got another name too but.

Actually my stepmothers in kabul at the moment, I'll ask her to get to the bottom of this debate for us once and for all.
