SHEER KHURMA
ING:
1 liter milk
10 - 12 chuwaray
1/2 cup badam & pista
1 pinch zafran
3-4 illaichi
2 tbsp ghee
1 cup sawayyan
1 cup sugar or to taste
METHOD:
saab se pehlay 10-12 chuwaray pani mai over night bhigo kar usko milk mai boil karlien
abb se pehlay aik pan mai 1 lit milk ko boil karnay kay liyee rakh dien ...1 - 1/2 hr tak cook karien takay wo thick ho jai , as per samina said kuch loag is mai 1 cup khoya bhii add kartay hain laikin us se milk ki aroma chala jata hai aur khaas sheer ki khushbo nahi rahtee ,tu in short samina ne khoya use nahi kia
abb aik aur pan mai 2 tbsp bhar kar ghee dalien aur us mai illiachi ko tor kar daalien thora fry kar nay k baad sawayyan add kar k usko shallow fry karien ,agar apko zayada ghee pasand nahi hai tu app pan ko inclined kar kay us mai se ghee ko nichoor kar sawayyan thick milk mai add karien aur usko soft ho janay tal pakaien, if u like tu ghee/oil bhii sheer mai add kar saktay hain
jab sawayyan pak jain tu usmai is stage par sugar add karien apnay taste k mutabiq,agar strating mai sugar add kardien gay tu sugar pani choor de gi aur phir milk ko thick karna mushkil ho jai ga
abb half quantity of badam pista bhii add kardien aur half garnishing k liyee bacha lain
4-5 chuwaray bhii add karien baqee garnishing k liyee rakhien
abb 1 tbsp water mai 1 pinch zafran mix kar k sheer mai add kardien, agar app chahien tu zafran ki jaga 1 tsp kewra bhii daal saktay hain but dono cheesien aik saat nahi dsaalna warna sheer ka taste kharab ho jai ga,kyon k dono bauhat hee strong flavours hain
chuwaray add kar k bauhat dair tak cook nahi karna hai, warnba sheer phut bhii saktee hai
abb sheer ko dish out karien aur pista badam n chuwaray se garnish karien

Theway thanks for the recipe, i tried it, although the sawwayian burnt a little, it turned out lovely, everyone enjoyed it.
