Bhuno the seviyan in some ghee, when you smell the toastiness, add milk and sugar and mixed nuts. Cook until reduced to desired thickness. Flavor with a few drops of kewra.
The key is the right quantity of seviyan.

Does it have to be ghee or can I use oil? I've heard some ladies saying they also add sweetened condensed milk..... have you tried that?

Ghee will be awesome, but oil works as well. I don't add condensed milk.
To tell you the truth, I have never made sheer in my life :D/ This is what the MIL does.

sweetened condensed milk will change the color of the milk and the whole sheer khorma.
It won't be as white.

Got the recipe from my mom. I might actually make the sheer khurma tonight or tomorrow. Will post the recipe then with proper measured ingredients.

I was also thinking of starting this thread.....it will be my first eid after my shadi so wanted to make nice sheer khorma....i will probably add condensed milk too!my mom adds it sometimes and it tastes and looks good so im gonna give it a shot inshAllah!:)

Just made the Sheer Khurma. Haven't tasted it yet. Smells good though.
Here goes the recipe
Sheer Khurma
1 half gallon bottle Milk
1 16 oz carton Half N Half Milk
1 32 oz carton heavy whipping cream
1/2cup sugar (add less or more depending on how sweet you want it)
4 tablespoons ghee
3/4 cup almonds (blanched & sliced)
3/4 cup pistachios (sliced)
3/4 cup dry coconut (khopra)
1/4 cup raisins (I am not a big fan of raisins hence less, you can add more if you like)
5 dry dates (chuwaray) (boiled for 15 minutes & then sliced)
2 cups sewaiyan (vermicelli) crushed
1/2 teaspoon kewra essence
In a pot boil milk & half n half. Keep stirring so the milk won't stick at the bottom of the pan.
While the milk comes to a boil, in a pan heat 1 1/2 tablespoons of ghee & add almonds, pistachios, dry dates & coconut flakes. Stir fry for 1-2 minutes or till the fruits start changing color. At this point they'll start giving their own aroma. Once done keep aside.
In the same pan add the rest of the ghee & stir fry vermicelli. Flame should not be too high otherwise the vermicelli can burn.
Now in the already boiled milk add sugar, heavy whipping cream, dry fruits, raisins, vermicelli & kewra essense. Mix well. Bring to a boil, then lower the flame, cover & let it cook for 10-15 minutes. Occasionally stir the Sheer.
Serve warm or cold.
