It's very easy. When you take a 2-digit number and subtract each digit from it, the result has to be a multiple of 9, ie 9, 18, 27, 36, 45, 54, 63, 72, 81 or 90. There is no other possible result. Therefore they just put the same item on all these numbers and can therefore guess correctly.

first time i picked a number and didnt subtract and it got that number
second time i subtracted the second from the first (57 → 5-7=-2)
