normally i mix potaoes,zeera,onion ,salt ,pepper,sabat poodina,a feww leaves of mint,pinch of ajwain if available,green chilli n chick peas n fill my samosa ,but i wuld like to know how u ppl make the filling ,so plz share

Boil and mash potatoes. Add finely chopped onion, finely chopped dhania, a few finely chopped green chillies, 1 teaspoon chilli powder, 1 teaspoon garam masala, 1-1/2 teaspoon salt (to taste), a handful of zeera, about 2 teaspoons of coriander seeds. Mash this mixture well and stuff the samosa sheets with it. The same mixture can be used to make aloo ki tikkiyan and aloo ka paratha, etc. If you have left over keema/shredded chicken...that can also be incorporated into the mix. You can even add green peas ot it.

I don’t like homemade potato samosas, chicken/keema works much better. Potato fillings are best left to bazaar walay samosay ![]()

^Riz, have you had homemade cheese samosay. They're delicious and they go away fast. In my home, they're more popular than the meat samosay. And they're easier to make. Suff em with your favorite kind of shredded cheese...throw in a mint leaf if you want...and fry. They're so cripsy and gooey. Sometimes I like the thinner pastry sheets better than the denser/heavier samosa shells found in the bazaar...cuz they're crispier.

My mum makes samosay with chicken keema and shredded cheese, they're my favourite. :p For pure potato, I prefer the heavier bazaar samosa shell, they don't taste as good in the thin pastry sheets at home.

I'm imagining boiled potatoes, cilantro, coriander, cumin, finely grounded Anardana powder, few calonji seeds, one halal chicken bouillon cube (or less depending on the amount of potatoes you have) and a liiittle bit of ghee so the stuffing will smell good as well.
Also I'm a meat and potatoes type of girl so I would prob replace ghee with keema. =)

if u really live in lahore.then y do u need to make samosas at home? u cant imagine how much i miss pakistani food ,just the other day i was remembering chicken patties from shezan n rahat......im so jealous of u

thanks guys for ur suggestions but i love potato samosas, so couldnt bring myself to add anything else n ended up making them just like i postd with potatoes n channa n they taste almost like lahore kay samosas

Lol I know, but I can't exactly eat the bazaar samosas everyday, mujhe apna pait pyara hai :).

I make three types of fillings for samosas - aalo, keema and chicken filling
aalo - boiled aloo, (cut in small pieces not totally minced), salt, red mirch, green peppers, anar dana, crushed sabat dhania, fresh dhania.
keema - dried bhunia keema, green peppers
chicken - chicken boiled and minced with mayo, salt and lots of black pepper. (for patties I add green onions).

So literally just take some cheese and samosa sheets, make the samosa triangle, fill it with the cheese and you're done? That sounds awesome! Any ideas on what kind of cheese will taste the best? I'm clueless.

I made aloo samosas today! :D This is the filling recipe: Boil two potatoes (chopped into small pieces). Fry some oil and add 1/2 tsp cumin seeds. Add 1 tsp garlic and ginger paste. Add 1 cup of frozen peas. Add spices: 1 tsp coriander powder, 1/4 tsp chilli powder and garam masala. I also added 1/4 tsp of my mum's mix masala and 1/4 tsp paprika. Add salt. Stir well and fry for another few min. Add the pre boiled potato pieces. Add a little water and allow to simmer till peas are cooked.
Can also add 2 chopped chillis if you like.

today i made chines samosas..yumm yumm that ws really tasty...i fill it by following ingredients
Boiled and mashed potatoes....Half kg
Boil and crushed chicken.........Half kg
chopped union...........one cup
Chopped cabbage......one cup
Chopped capsicum.....one large piece
Soya sauce ..... 2 table spoon
vinegar...............2 table spoon
chines chilli ......2 table spoon
Chines salt.........1 table spoon
Black pepper......1 table spoon
add some crused red chilli
Mix all ingredients in bowl and fill it in ur samosa patti....
dont be surprised by quantity:D...I have to made aftaari for 18 people MASHA ALLAH
