shan Masala

tell you to use to use the whole packet in one dish… I think its very strong if I use it Id use a teaspoon or so

do you use it all in one dish?

What other brands do you use?

yeha..i just use a spoon or two....one packet is way too much..i also use National Masala...my mom says Shan is better..dont know why...

For Biryani, seekh kabab, tikka and behari kabab I use the whole pack. For everything else I use a couple of tablespoons.

I have Mehran to be much better than Shan. But Mehran doesn't have a vast SKU. Mehran's Sindhi Biryani and Seekh Kababs are way better than Shan's.

when making chicken biryani, with 1 kg of chicken you use the whole pack. not sure about other dishes.

when you make the biriyani and tikka etc do you add other spices...like coriander and cumin etc?

Ive seen "national" in shops but havent used them..
Are these spices different to the indian versions?

are Pak brands very different tasting to Indian

There is a world of diff betwen Pakistani and Indian brands. I ONLY use Pakistani spices. Indian spices are heavy on karri patta and turmeric whereas Pakistani brands lean towards garam masala and dhanya.

When using box masalas I don't use anything else, not even salt. For Biryani, I add salt to rice while boiling.

cumin and corriander have the same taste all over the world , When i make biryani i don't use any other spices as it's not necessary.

national masala'z aren't that good.

National, Zaiqa and Ahmed's masalas aren't so good. I usually stick to Mehran or Shan.

National's Kaleji masala is pretty decent.

Shaan masala has the best spice combinations but they use MSG as a flavour preservative. National is okay- mehran is so so.
Indian masalas are better for veggie dishes and lentils not for meat dishes.

i've tried shan and national masalay in pakiland, canada and arabia.. shaan wins ... national sucks when it comes to staying true to the taste of diff dishes...

mehran .. i dont know bout other countries.. but here in arabia... i've bought their red chilli powder and dhaniya powder.. and they have always turned out horrible... had to pass dhaniya powder thru a sieve cuz it had so many tinkay in it... not good at all....

for shaan...i love love love bombay biryani... pulao biryani (delhi style.. it also comes in memoni style.. but i prefer the first one)... matka gosht.. these are my fav 3.. mmm

i've come to the conclusion that how much u use depends on where u live... honestly!! ... in canada i would have to use the whole pack to get the "spicey-ness" i wanted... here in arabia... 1 tbsp is enuff even when cooking the same amount! and shaan masalay are way more hot in pakistan...

for shaan briyani masala I use the whole packet but with around 3 lbs of meat otherwise if I am cooking a small amt, I use half a packet.
I love Shaan’s tikka type masalas - they are so yummy when you add them to your chicken and sit it for marination for a few hours. The chicken turns out totally scrumptious :yummy: dang it now I want some of that chicken tikka!

i usually follow my own way of cooking.... but ive tried it the way the boxes say to cook.. and it turns out fine too... either way... yummy food : drool:

in Japan shan masalas are called Yaan masalaaz.

if were makin alot a food then we use half...but never all of it....it gets too strong...choti moti dishes per to we use like one tbl spn...:)
