You can store the unfried kababs in freezer. What I do is boil keema with all the spices, grind it with additional fresh herbs and then make a tray of shaamis and freeze. When they’re hard I take them out of tray and put them in ziplocks. Whenever I need, I just dip 'em in egg/red chili/salt mixture and shallow fry them.

Thats EXACTLY how i do it! They are nice to have at hand in case of unexpected company…i also make and freeze tons of samosas, seekh kababs and koftay too..
