Shami Kebab freshness

I wanted to make shami kebab for eid, if i make it a night before, how do you keet it fresh and how do you warm it up the next day?
microwave or oven?

You can store the unfried kababs in freezer. What I do is boil keema with all the spices, grind it with additional fresh herbs and then make a tray of shaamis and freeze. When they're hard I take them out of tray and put them in ziplocks. Whenever I need, I just dip 'em in egg/red chili/salt mixture and shallow fry them.

CA, i understand the freeze and fry concept. But what im saying is, since its eid and there wont be time to fry so much kebabs in the morning. I want the table set in the morning, and everything ready, no frying shrying when your all decked up!
Soooo, what should i do if i fry the kebabs on chaand raat? Should i freeze them and then in the morning put them in slow oven? or refrigerate them?

Thats EXACTLY how i do it! They are nice to have at hand in case of unexpected company....i also make and freeze tons of samosas, seekh kababs and koftay too..

They won't stay as fresh but if you don't have an option then keep them in fridge not freezer. They'll break if you have already fried them and freeze.

what pastry do you use for your samosa?, i dont use filo pastry i make it myself, but once the samosa is frozen they crack when frying

My mom fries them and freezes them away. Anytime we want to eat kebabs, we just microwave them and they turn out great.

the easiest way to keep the freshness, and this might be something halfway between what you want and what the others recommended, is to thaw them out in the microwave. meanwhile heat up the oil in the pan. then carefully place the kebab on the pan. it will take max 2 mins each side to basically brown them.

if you want to pre-fry them, i would think warming them in the oven would be the best (or toaster oven if you have one), but it might take forever.

i use spring roll covers or wonton wrappers. i prefer the former, because they taste great when baked as well

Yes, thats what ive come up with. Frying them night before, refrigerate then next day put them in the oven an hour before lunch/dinner time. :k:
