I have a really simple recipe. Its nothing too fancy but does the job.
boil chicken pieces along with channa daal, almost half kg chicken with one cup channa daal. Add in sliced onion, half tsp ginger and quarter tsp garlic, four to five cloves, two pieces of cinammon and a few pieces of cardamom. Salt to taste
When the water evaporates fully and both daal and chicken are 70% cooked. cool the mixture and chuck out the cloves,cinammon and cardamom pods and discard. Separate bones from meat .
Put in the chopper, add 4-5 green chillies, one tsp onion powder, one tablespoon cumin powder, one tbsp corriander seed powder, handful of fresh corriander, half an egg, salt if needed. mash it all fine.
make patties, and either shallow fry them after dipping in egg.
Or , deep fry them , after coating them with bread crumbs right after their dip in the egg.

Shami kebabs are traditionally made with BEEF, not Chicken.
With chicken you don’t get the raisha’s to blend in like you could do with beef/lamb

Agreed. I always use beef for mine too.
But some people avoid red meat because of health reasons. I might however give chicken a try for my kid’s lunches

my mom made me the best chicken shami kabobs this weekend, alhamdulillah :).
she boils the whole chicken with garlic/ginger/whole coriander/ whole black pepper/red chili flakes. adds chana dal and boils until soft. removes bones, adds fresh coriander, mint, green chilis, onions and used food processor to mix and blend. make kabobs and freeze!
