i add i cup of daal to one pound of meat....
do u need the recipe or just the proportions....let me know if so ,i can post the recipe too....:)
and sorry dont know about baked kababs...never tried it...!

Beef - very small piceces (not mince) 1 kg
Channa dal 250 grams - soak in water (not warm) for 3 hours - water should 2 times of dal. (first wash the dal, then soak it in twice amount of water for 3 hours).
Gram masala (pissa) - 2 teaspoon
Red ilachi 6
Kutti lal mirch 1 and half table spoon
Salt 3 teaspoon
Onion 1 big
Ginger 50 grams cut into small pieces
Green bullet chillies 8
Mint 10 branches
Egg one
Oil for frying
Garlic 6 cloves
After soaking dal, put the meat, garlic, garam masala, kutti mirch, illachi, salt into dal. Boil on low flames till, water dries out. (when little water is left, it is better to simmer the stuff as we do for rice cooking i.e dam)
Then mash the whole stuff
Mix the egg, ginger, mint, onion cut into very small pieces, green chillies cut into small pices and mix thoroughly.
Make kebabs.
Heat the oil properly before putting kebabs.
Note if your kebebs are breaking, use egg white for frying.

There are two types of green chilles
Rocket chilles - which are too hot and small in size. We call it Mirch Malir here in Karachi.
Bullet chilles - which are bigger in size and far less hot.

recipe for shami kobabs
beef..........2 pounds
daal chana.....................250 grams
salt......hasbezaiqa
red mirch...........................3 table spoon
garam masala......................1 table spoon
ginger...........................2 table spoon
onion...................half to put it while cooking and another chopped to mix it in the kobabs batter
cilantro....................adhi gatti
green chillies...............5-6
egg........1
IF u are using pressure cooker then just put the meat,water around 3 glasses,red cillies,ginger paste,salt and give it a pressure about 15 minutes or on regular when the meat will be tender add daal chana and half onion and give it a pressure for another 20 minutes or until the daal is mixed and tender. Grind them in chopper mix chopped onion,cilantro,green chillies and 1 egg. and make them round shape.Just pan fry them with 1 table spoon oil and if u think they will break just beat egg and put kobab in it and fry.:)

Why can't you use mince? I use it all the time when making shami kebabs as it cooks far quicker and is easier to mash up afterwards.

Well mince kebabs break easily. Small pieces of meat if mashed properly make good kebabs!

hey guys, what kinda chopper should i use?? the regular chopper used to grind veggies and stuff or the mincing machines that are mostly used for making keema??

CA, we use the machine to make keema. I will ask Ammi for proportions of daal to gosht.

Well use a ballon - the one you use for roti! Its all manual but the kebabs would be very tasty. And if you have sil-batta, that's really wonderful.

I think you can do this. As all the stuff is already cooked except the fresh vegetables which can be cooked by baking.
You can also try raw banana shami kebabs.
