this shami kebab name came from shami sub cast of arian or other casts and shamis are people from one typical village in indian punjab.this shami kebab is originated from that village and even shami people of pakistan

in punjabi , shami = evening may be some avid kabab lover loved to have them in the evening & named them shami kabab
Actually, shami = shaam ko
i.e. mein shami pakistan jaa rayah aanh = mein shaam ko pakistan jaa raha hoon
but just evening = sham (in modern punjabi)

TLK's information is reliable one on the subject. Kebabs, koftas and pilous are all central asian dishes. Babur wrote in his book that people of India were quite strange as they eat anaj with anaj (roti with daal).
