Saving the salaan!

Is there a way to save your salaan from barbaadi when its almost cooked? Last night I realized more than half way through cooking that I forgot to add salt and haldi to your basic beef salaan. I panicked and added it even though it was late..The color didnt come out as it should but it tasted ok. Any ideas on what I could have done?

As long as the food is hot and bubbling you can add salt to it...even at the end.
I would have just left out the haldi however...not a big deal if you dont add it to your salans...it's just for color mainly but if not cooked in properly it can give the salan a haldi-like flavor.

Is there any point in salan making afterwhich you are not supposed to add any more spices? Like what if when you are done you taste it and its not spicy enough, can you add more chilli powder at that point?

I agree with Angel Eyes. You can add salt later, it's ok, but do cook it for a while then to let the salt penetrate the meat. But the haldi, if you've forgotten it, you can leave out altogether, and it won't hurt. The curry will actually have a nice taste to it different from when you add it. Cumin, coriander... if you forgot either one, then you can add it, but add some water and cook another 20-30 mins, for the spice to get into the meat. If you're making a veggie dish and you feel it needs some more of a spice, you can add more, add a bit of water too to help it dissolve into the veggies, cook a little longer, and you should be good to go.

no you cant....cuz then the chilli powder wont be boonified into the salan and meat and the taste of the mirch will be kinda "raw" (dont know what other word to use lol)..u know as if u just took a taste of the powder right out of the jar. ...thus giving it that spicy taste that hits the throat...u know what i mean? i hope u do lol

you can always add green chilis and cook it in there if its not spicy enough.

all your spices should be added by the time you are done boonifying. after that it's too late.

If you havnt put enough chilli into your salan, you can add fresh chilli's. Simples.

dont add chili powder or haldi in the end, ever. it does not taste right.
haldi can be skipped all together but if the heat is not enough, just add fresh chili or black pepper.
salt can be added at any time

if you must have more chilli powder or haldi in your salan and you forgot then you can add them by heating some oil sepaately and add them, stir once or twice and then add to salan....this way you're not adding kaccha spices.

Salt can be added at the end, infact it's recommended to be added at the end when all other ingredients have been added and you know how much salt is actually needed in the salan.

if I everforget to add haldi or laal mirch to my salan I fry them in another pan with a tbsp of oil.. like tarka then pour in the salan..
The color turns out good and the frying makes up for not giving the spices time to cook with the salan.

i agree with those who have mentioned frying of red chili powder in lil bit of oil and then do the tarka...

haldi can be skipped

salt can be added at anytime and at any stage of making the dish...

if spices r less i put shaan zafrani garam masala powder and black pepper..this makes up for the mirch..otherwise fresh green chillies...

If u forgot the salt, add a bit of water to the above mentioned tarka and add the salt until it dissolves, then put it back in the salan. Otherwise add salt whenever it needs it, straight to the pot.

If i forget a crucial spice, but the meat is nearly cooked, I just take all the meat out of the pan add the spice and water and cook it down again then put the meat back in, and let it simmer in the pan with the lid on for a while.

true....you can do that 2 but when u do...the salan will get the flavor n not so much the meat. To seal the flavor into the meat...you have to fry the meat with your spices.
