Is sauté and bhoonna the same thing?
Re: Sauté and 'bhoonna'
Ok, i'm no expert, but to me:
Bhoona means - when the masala mixture is all amalgamated and the oil starts separating a little.
Sauté means - to quickly fry...so like when you sauté onions in a little oil etc.
Re: Sauté and 'bhoonna'
^Agree with Roushie.
Sautee is a light fry and the the ingredients (let's say its onions) don't mash up. Whereas when you "bhoonify"...the ingredients (onions, tomatoes, garlic) do mash up and become finer.
Re: Sauté and 'bhoonna'
aah, thanks guys. Very nicely explained.
Re: Sauté and ‘bhoonna’

Re: Sauté and 'bhoonna'
nida...i think its only us pakis and them indians that bhoon our food hehe :D wonder if they even have an english word for it!
Re: Sauté and 'bhoonna'
^ This is correct. There is no English substitute for bhoonna. The internet search gave me nothing. This is why I thought I should ask the experts. :)
Re: Sauté and 'bhoonna'
yeah right . they simple said , cook the food for 10- 15 min (or whatever time) till the food separates from pot and oil appears.
Re: Sauté and 'bhoonna'

Re: Sauté and 'bhoonna'
Frying can be an equivalent but it does not carry the spirit of Bhoona. Bhoonofy is done to amalgamate various ingredients and give out a different aroma and taste then the original ingredients. I do not know any other cuisine of the world has bhoonofy as a step for cooking.
Re: Sauté and ‘bhoonna’
Mirch , mashallah sai our desi food is the only food with so much bhoonnna involved
..
Re: Sauté and ‘bhoonna’
I just received praise from a competent cook…my life is now complete ![]()
Re: Sauté and ‘bhoonna’
Far from competent my dear .. still a long way to go :hinna: …
Re: Sauté and 'bhoonna'
But doing this process brings you bad names by people here. Currey eating animals!!! - even by some of the BBCDs!. Anway if you want to go outside after the desi cooking you need to take a shower and change clothes as your hair takes the smell of fried onions and your clothes that of the masalas.
Re: Sauté and 'bhoonna'
Bhoonna has English .. its called stir to death

Everybody is offended with everybody else's food aroma. It does not mean you stop eating the food you like and are used to. You yourself mentioned the steps to take after you are done cooking to get rid of that aroma . I refuse to call it a smell. It is aroma not smell. :)
Re: Sauté and 'bhoonna'
Bhunafying = Parching in english?
Re: Sauté and 'bhoonna'
Not really , when your parch something you dry out on intense heat. While you bonofy something it becomes thick but does not get dry.
