Saucy Chicken Breast Recipes

Can anyone please share tried and tested saucy chicken breast recipes? I’m not much into stews and fried things, so mostly use my oven to cook up different variations of chicken breasts… i’ve done the breaded and baked thing, the barbecue, now i’m looking for something that’s saucy and a tad bit spicy to spoon over rice and pasta.

Open to all suggestions…it doesnt have to stay whole, I can cut the breasts into strips or cubes/bite-size pieces… not picky.

im not sur ewhat you mean by saucy.... how is ti different from a stew?

I made a "chicken marsala" yesterday...in quotes cz this dish is traditinoally cooked with wine...ha dto do a little bit of research to find a good substitute. basically I pan fried boneless chicken tenders in plain flour, and made the sauce separately..poured it over the chicken

Something we call "red chicken" - usually eat it with boiled white rice and salad.

Cubed chicken breast
grated ginger (about a tablespoon)
grated garlic (about 8-9 cloves)
plain red chilli powder (1 tablespoon)
one small can of tomato sauce (NOT paste)
garam masala powder (less than half a teaspoon)
oil (about 4 tablespoons)
half of a lemon's juice
2 tablespoon of tandoori chicken/chicken tikka spice mix (homemade or Shan, doesn't matter)
7-8 fresh curry leaves

Mix all the ingredients, except for the curry leaves, and marinate - the longer the better, obviously.

When you're ready to cook...heat a tablespoon of oil in a large skillet and when it gets hot add the curry leaves and let them spatter about for a minute or so. Add all the chicken (marinade/sauce included) and cook until the chicken is done. You'll know it's ready when the oil starts separating. Spoon over white rice and enjoy! =)
